Restaurant Review needed

So the peons and slaves desire to know how dinner was. We, after a grueling day of moving boxes, packing, being rained on and other unpleasentries, had creamed chip beef on toast and hotdogs.

So last night I went to Alinea with some family. Sweet mother of pearl that was some good food. No, seriously. Absolutely incredible. They've got an open kitchen so I was very obviously checking out the line. You know how you hear about organized chaos? How every food writer talks about how when it's done right it's like a kitchen ballet? I always thought these guys were full of themselves. I now know the truth. These cooks were dancing. A beautiful, silent dance. 18 guys on the line. Each station is putting out 1-2 dishes. Last night was 70 covers. I was told that things can get a little hairy if they ever go over 100 ppl, but I kind of doubt it. It was so beautiful to watch.

Now, the important thing. The food. Incredible. Each plate was the perfect portion. The flavors were so intense that if you had more it would become overwhelming, killing all of your taste buds and becoming just plain awful. BTW if someone could tell me how you make a powder out of brown butter I'd really appreciate it. Although everything was delicious, the fish dishes really shone through.The interesting serving utensils were cool but my favorite plates were the ones that were normal, just slightly different. While it was pretty neat eating off of a skewer that loked like an acupuncture needle I liked the actual plates. One of my favorites was a large bowl with a very small bottom. At first glance it looked like a perfectly round. When you looked closer you noticed that the rim of the bowl that was closest to you was the same size, but that the opposite edge was a lot bigger.

Ack! I'm trying to explain what's going on and I'm having a hard time. I'm a little too exicted right now. I just can't seem to find the right word to describe things. All I can say is that it was an awesome meal!

the service was very attentive, but a little offputting. At the beginning of the night they served and cleared int he traditional way. By the end of the night it was a little willy nilly. I didn't need the stuffy service, but I would've like to have consistent service.

I had too much wine and I'm afraid that I might've humiliated myself by acting like myself. If this was the case I apologize to those who had to suffer.

Now even though there were many many courses, there wasn't a single hot dog or kraut in the place. Although there were some delicious pickled ramps and a braised leek that went with a lovely bison dish.

I cannot argue with anything MoM writes, except 1 thing (which I let pass by when it was initially proffered):
The service to me did not need to be consistent.
Perhaps they appeared to serve in a formal way because that is the way their haphazardness-of-serving happened to begin.
